This soft, creamy cheese from the valley of Cabrales is wrapped in chestnut leaves and stored in humid caves for maturation. Queso de Cabrales is certainly serious competition against the best Roqueforts, Stiltons and Gorgonzolas! Popular desserts include arroz con leche, a rich, cream-rich milk rice pudding, and Spain's best butter, called mantequilla .
